Around this time every day I start to think about what’s for dinner. Since I’ve got a beautiful, giant sweet potato {SP} burning a hole in my fruit basket, I’ve decided to transform it into my {and my husband’s} favorite spicy sweet potato fries tonight. Not only are they spicy, sweet, salty, crunchy and absolutely delish, they’re also one of the best things you can eat for energy, health and weight loss!

The health benefits of SPs are incredible. They’re a killer source of carotenes, which play a role in healthy vision, cancer prevention and disease prevention. If you want to get the most nutrient bang for your buck, choose the darker skinned versions; the darker they are, the higher the carotene content. They’re also loaded with vitamin C… Possibly why Christopher Columbus took them with him to Europe… anti-scurvy regime, Chris? Good call! Other nutrients found in SP’s include B6, B2, manganese, copper, biotin, and pantothenic acid. They help boost immune function, stabilize blood sugar and keep you feeling full and satisfied long after your plate is cleared — GREAT for appetite control and weight loss!

These funny-shaped roots are naturally gluten-free, grain-free, cholesterol-free, and chock full o’ flavor. One medium SP has 112 kcals, 26g carbs and 4g fiber. If you’re a gym rat, the carb content makes them perfect for a pre-workout snack! {Here’s my fave pre-workout SP snack.} BONUS: They’re also an amazing source of much needed energy for Paleo athletes.

A few fun spud facts: SPs are one of the oldest known vegetables and there are more than 400 varieties. Crazy, right?!
